Fry the pieces of meat without oil. Add the onion and when the meat is well fried, stir everything. Currently chop and add carrots. If necessary, roast the pieces a little more with meat and onions. Add a glass of vegetable juice and red wine, deglaze the mixture and simmer on a low flame. Dice the parsley root and beetroot, add and let simmer. After about five minutes, add the diced potatoes. Let the stew rest a little over low heat / residual heat.
