Chebureki with Rice, Eggs, and Fresh Herbs

There are many recipes for chebureki on the Internet. This is not surprising as the dish presented by the Crimean Tatars has taken a firm position among the hits of street fast food. Many people still remember those chebureki houses where crispy, flavorful, juicy chebureki with a meat filling were being sold. We used to go out to eat chebureki and take them home. Nowadays we take pizza home to heat it up, but before that we used to run and hurry to take chebureki before they got cold. But everything changes. Those chebureki are gone, no one kneads the dough by themselves… I’ll bring the chebureki to you. But this time the chebureki will be without meat.

Ingredients

For the dough:

  • Flour – 4 cups
  • Water – 1 cup
  • Vegetable oil (any) – 5 tablespoon.
  • Salt – 0.5 teaspoon.

For the filling:

  • Boiled rice – 1 cup
  • Hard boiled eggs – 2 pcs.
  • Sour cream (fat) – 1 tablespoon.
  • Scallions
  • Parsley
  • Dill
  • Cherry tomatoes (if desired)
  • Vegetable oil for frying

Directions

  1. Cook the filling for the chebureki. Chop the fresh herbs, scallions, and onions. Chop the eggs. Add everything to the rice, salt, pepper, and mix.
  2. Prepare the dough for the chebureki. Sift the flour, add salt. Prepare hot water. Make a well in the flour, and pour the oil into there. Add some water gradually.
  3. The dough for chebureki should become elastic and soft and not stick to your hands.
  4. Roll the dough forward strongly pressing it by the inner part of your hand.
  5. Then do the same with the other hand to the other side. Continue this process for at least 10 minutes. Cover the dough with a cloth and leave it for half an hour or just an hour.
  6.  Knead the dough slightly once or twice more during this time.
  7. Roll out the dough thinly, put the filling on one half.
  8. Add a spoonful of the full-fat sour cream.
  9. Put the cherry tomatoes (if desired).
  10. Stick the edges together greasing them with some water and press the edges with a fork.
  11. Heat the vegetable oil in a frying pan and fry the chebureki.
  12. Place the chebureki on a napkin or paper towel to absorb the excess fat.
