  • 50 g butter
  • 30 grams flour
  • 1 liter meat broth
  • 120 g cheese, rated (old Holland Gouda)
  • pepper
  • 4 teaspoons crème fraîche

Instructions

  1. Peel the onions and finely dice them. Sweat in the butter until translucent. Dust with the flour, briefly toast until lightly, deglaze with the stock and simmer gently for a few minutes.
  2. Season with pepper, fold in the Gouda cheese and crème fraîche. Continue heating until the cheese has melted, then serve immediately with crusty bread.
