Chicken with Courgettes, Peppers and Tomatoes (in the Oven)

Chicken with vegetables and spices, baked in the oven, turns out to be very juicy and aromatic.

Ingredients

  • Chicken legs – 2 pcs. (or other parts of the chicken)
  • Zucchini – 1 pc.
  • Bulgarian red pepper – 1-2 pcs.
  • Tomatoes – 2-3 pcs. (small size)
  • Bulb onions – 1 pc.
  • Garlic – 1 clove
  • Vegetable oil (olive) – 3 tbsp + for frying
  • Dried garlic – 1 teaspoon
  • Adjika dry – 1 teaspoon
  • Dried basil – 1 teaspoon
  • Sugar – 0.5 teaspoon
  • Ground black pepper – to taste
  • Salt to taste

Directions

  1. Combine olive oil, dry garlic, adjika, part of basil, salt, and black pepper.
  2. Wash chicken legs (or other parts of chicken), dry with paper towels, and rub with the prepared mixture of oil and spices. Leave the chicken to marinate for 1 hour.
  3. Peel the zucchini and bell pepper. Cut the zucchini into 1 cm thick cubes. Cut the bell pepper into wide strips.
  4. Peel and cut onions into half rings. Peel and chop the garlic with a knife.
  5. Put the chicken legs in a saucepan with heated oil and fry on all sides until golden brown. Then transfer to another dish.
  6. In a saucepan, fry the onions until transparent, add salt and pepper. Add garlic and sauté the onion and garlic, stirring occasionally, for 1 minute.
  7. Add some sugar and stir.
  8. Put the zucchini and bell pepper in a saucepan, sprinkle with the remaining basil. Stir and fry the vegetables for 1.5-2 minutes so that they are soaked in oil and spices.
  9. Put the fried vegetables and chicken legs in a baking dish.
  10. Add tomatoes, cut in half, or quarter. Cover the dish with foil, put it in a preheated oven, and bake the chicken with vegetables in the oven for 40-45 minutes at a temperature of 190 degrees. 10-15 minutes before being ready, remove the foil and bake the chicken with vegetables further at the same temperature.
  11. Very tasty and juicy baked chicken with zucchini, pepper, and tomatoes are ready.
