Chocolate Muffins with Cherry Filling

Ingredients

  • Butter (room temperature) – 60 g
  • White sugar – 150 g
  • Egg (room temperature) – 1 pc.
  • Cocoa powder – 20 g
  • Wheat flour – 150 g
  • Buttermilk or sour milk – 140 g
  • Soda – 1/2 teaspoon.
  • White wine vinegar – 1 1/2 teaspoon

  • For glaze:
  • Butter (room temperature) – 60 g
  • Powdered sugar – 125 g
  • Cocoa powder – 50 g
  • Milk – 4 tbsp

Directions

  1. Preheat oven to 180 degrees. Cover the muffin molds with paper baskets (12 pieces).
  2. Beat butter and sugar with a mixer until fluffy.
  3. Add the egg to the butter mixture and beat well again.
  4. Add to the total mass of cocoa and mix well with a spoon, and then with a mixer on medium speed for 1 minute. Add buttermilk and flour, stir with a mixer for about 2 minutes. Add soda, vinegar to this mass and mix quickly with a mixer until smooth.
  5. Spoon the dough into prepared molds. Place in oven and bake chocolate muffins for about 20-25 minutes.
  6. Remove the finished chocolate muffins from the oven and place on the wire rack to cool.
  7. In the meantime, prepare the frosting. To do this, beat the butter and icing sugar with a mixer at medium speed. Then add cocoa and stir well with a spoon. Add milk and beat with a mixer for 2 minutes.
  8. In each muffin, make a depression with an apple core remover. Put some jam in this recess and cover with the middle that you got from the muffin.
  9. Apply icing on top of each muffin, hiding the middle, and decorate the chocolate muffins with whipped cream and cherries.
