Ingredients

  • 500 g chicken breast
  • 1 onion (s)
  • 2 carrot (s)
  • 4 stalks celery
  • 4 potato (s)
  • 200 g lentils, red
  • curry powder your choice
  • 2 tablespoon tomato paste
  • 1 can coconut milk, unsweetened
  • salt and pepper
  • 1 liter vegetable broth or chicken broth

Instructions

  1. Cut the meat into bite-sized pieces. Peel and chop the onion, carrots and potatoes. Wash the celery and cut it into small pieces too.
  2. Fry and season the meat, take it out of the pot. Sweat the onion in the frying fat and dust with curry powder. Add the tomato paste and let it sweat briefly.
  3. Then add the broth and simmer covered with the lentils, potatoes and vegetables. After 20 minutes, add coconut milk and meat and bring to the boil.
