Ingredients

  • 3 teaspoons oil
  • 360 g poultry meat (chicken or turkey fillet), cut into strips
  • 600 g veetables (zucchini, red pepper, leek), in equal parts
  • 1 onion (s)
  • 3 spring onion (s)
  • 1 tablespoon curry paste
  • 3 teaspoons curry powder
  • water
  • Chicken broth (instant)
  • 1 pinch (s) salt
  • 3 tablespoon crème fraîche or soya cuisine
  • 3 teaspoons peanut cream, with peanut pieces
  • 180 g rice (frarant rice)
  • Coriander greens, to taste

Instructions

  1. Clean and wash vegetables and cut into cubes / strips.
  2. Cook the rice according to the instructions on the packet.
  3. Fry the poultry strips with diced onions in oil and add the remaining vegetables, finally the zucchini and spring onions. The vegetables should still be firm to the bite. Fry the curry paste and curry powder.
  4. Then add boiling water, Soya Cuisine, peanut cream and spices, stew for about 10 minutes and season to taste.
  5. If you like, you can sprinkle with freshly chopped coriander.
  6. After the Christmas holidays, I can easily imagine this light dish as a turkey leftovers. Then fry the vegetables first and add the turkey meat that has already been cooked.
