Ingredients

  • 4 tablespoon lemon juice
  • 200 g couscous
  • 375 ml whey, alternatively buttermilk
  • 5 tablespoon olive oil
  • salt
  • pepper
  • 1 clove garlic
  • 1 bunch parsley
  • 1 bunch coriander greens, to taste
  • 300 g zucchini
  • 1 red pepper (s)
  • 300 g beefsteak tomato (s)
  • 1 bunch spring onion (s)
  • 200 g sheep cheese

Instructions

  1. Put the lemon juice with the couscous, half of the whey, oil, salt and pepper in a bowl. Let it soak for about 15 minutes.
  2. Peel the garlic and chop in to fine slithers. Wash the parsley and coriander and chop medium coarsely. Wash the vegetables. Clean and finely dice the zucchini. Halve the pepper, clean and also finely dice. Cut the tomatoes into narrow wedges. Clean the onions and cut into rings.
  3. Pull the vegetables into the couscous, crumble the cheese in and arrange the salad in a bowl. Add the rest of the whey just before you eat.
