Ingredients

  • 1 cup rice pudding
  • 2 cup water
  • 1 cup milk
  • 1 dash condensed milk
  • 5 tablespoon vanilla sugar
  • 3 apples
  • 2 orange (s)
  • 2 tablespoon sugar
  • 1 teaspoon, leveled cinnamon powder
  • 1 pinch allspice
  • water

Creamy Rice Pudding with Fresh Applesauce

Instructions

  1. Boil 1 cup of rice with 2 cups of water in a saucepan. As soon as it boils, turn off the stove or set it to the lowest setting and let the rice soak for 15 minutes.
  2. In the meantime, squeeze the oranges and bring the orange juice to a boil in a second saucepan with 2 tablespoons of sugar. Cut the peeled apples into small pieces, remove the core and add the apples to the boiling orange juice. Season with cinnamon and allspice and simmer on low heat for 30 minutes with the lid closed. Stirring occasionally.
  3. The rice is now swollen, the water is completely absorbed. Add the milk, the condensed milk and the vanilla sugar and bring everything to a boil. As soon as it boils, turn the stove to the lowest setting and let the rice pudding - similar to risotto - boil down while stirring continuously, until the milk is absorbed and a creamy consistency has arisen. Divide the hot rice pudding into 4 bowls.
  4. Process the apples into puree with a hand blender or in a blender. Add the applesauce to the rice pudding in the bowls. Serve warm or cold.
