Lassi is a yogurt-based drink made by whipping. Bright cucumber lassi with the addition of mineral soda water, sesame seeds, and spices is a refreshing drink that will come in handy on hot summer days.
Ingredients
Cucumbers – 2 pcs. (200 g)
Dill greens – 20 g
Parsley – 30 g
Yogurt – 200 ml
Sparkling mineral water – 100 ml
Sesame – 1 tbsp + for serving
Ground nutmeg – 1 pinch
Ground coriander – 1 pinch
Salt – 1/4 teaspoon
Ground black pepper – 1 pinch
Ice – 6 cubes
Directions
You can choose spices and herbs according to your taste.
Wash the cucumbers, cut off the ends on both sides. Cut the cucumbers into large pieces and send them to the blender bowl with the “knife” attachment. If desired, you can cut 2-3 slices of cucumber to serve the finished drink.
Rinse greens, remove tough stems. Then coarsely chop the greens and add to the cucumbers. Leave a sprig of parsley to serve.
Send ice cubes there. Pour in yogurt and water. Add salt, black pepper, coriander, nutmeg, and sesame seeds.
Beat the contents of the blender at high speed until smooth (I beat for 5 minutes). You can use a hand blender if you wish.
Pour the cucumber lassi into glasses, sprinkle with sesame seeds and garnish with fresh parsley leaves. If desired, glasses can be decorated with cucumber slices.
