Danny`s Delicious Potato Soup with Meat Sausage

Instructions

Peel and dice the potatoes, carrots, celery and onion. Wash the leek, cut in half and cut into fine strips.
First fry the onion and bacon in a large saucepan in hot rapeseed oil, then add the potatoes and the other vegetables, except for the tomatoes, and fry them briefly. Then deglaze the whole thing with the vegetable stock and season with a little salt and nutmeg. Put the lid on and let it simmer for about 25 minutes, stirring every now and then.
In the meantime, cut the sausage into cubes.
When the vegetables are soft, add the tomatoes and stir. Season again to taste and add the marjoram. Then also add the meat sausage to the soup. Finally stir in the sour cream.
Tip: The soup tastes almost better warmed up than freshly cooked, I always make more for the next day.
