Ingredients

  • 2 cup spelled flour, 81
  • 1 cup rye flour, 50
  • 1 ½ cup water

  • 2 tablespoon flaxseed
  • 2 tablespoon oatmeal
  • 75 ml water

Instructions

  1. Put the flour and salt in a larger bowl, dissolve the yeast with the cold water and mix with the flour with a wooden spoon until there are no more pockets of flour. I then put the dough in a cool room, in the hallway, basement or refrigerator for 20 hours.
