Delicious Pumpkin Pie

If you want to surprise your loved ones with something special, prepare a delicious pumpkin pie according to our recipe. Just do not tell right away about the composition of the filling: let the household try to guess! The fact is that its taste is so exquisite that few people would think of a pumpkin. And the fragrant nut-cinnamon sprinkle completely confuses all the cards. So, get ready for genuine amazement and well-deserved compliments addressed to you! Just remember that the delicious pumpkin pie must cool completely, otherwise, it will be very difficult to cut it neatly.

Ingredients

For crumb:

  • shelled walnuts – 0.3 cups
  • flour – 0.3 cups
  • sugar – 0.25 cups
  • ground cinnamon – 1 teaspoon.
  • butter – 2 tbsp
  • a pinch of nutmeg

For filling:

  • pumpkin pulp – 500 g
  • sugar – 1 glass
  • butter – 100 g
  • eggs – 3 pcs.

For the test:

  • flour – 1.25 cups
  • sugar – 0.5 tbsp
  • ice water – 3 tbsp
  • salt – 0.5 teaspoon.
  • butter – 100 g

Directions

  1. Make dough for a delicious pumpkin pie. First, sift the flour and salt through a fine sieve into a large bowl. Add sugar and butter, cut into small pieces. Rub the butter into the flour until crumbs are obtained.
  2. Pour in water and knead a smooth dough. Add more water if necessary. Roll the pie dough into a ball, wrap it in plastic and refrigerate for at least 1 hour.
  3. On a floured surface, roll out the dough into a circle with a diameter of 32 cm. Put in a mold with low sides, 23 cm in diameter, so that the bottom and sides are closed. Cut off excess dough from above. Return to refrigerator for another 1 hour.
  4. Cover the pie dough with a sheet of parchment, add dry beans, and place in an oven preheated to 180 ° C for 15 minutes. Remove beans and parchment, return to oven for another 5 minutes. Let cool slightly. Do not turn off the oven.
  5. Meanwhile, prepare the pie filling. Cut the pumpkin into small pieces and boil in boiling water until soft, 15 minutes.
  6. Beat pumpkin, sugar, and butter with a blender. While continuing to beat, add eggs one at a time. Pour the filling into the dough mold.
  7. Prepare crumb. Finely chop the nuts. Combine flour, sugar, cinnamon, nutmeg, and butter. Add nuts, stir. Pour evenly over the cake.
  8. Place in the oven for 45 minutes. Let cool pumpkin pie on a wire rack.
