Delicious Pumpkin Muffins

These cupcakes are sure to become a frequent guest on your table. It’s very easy to make them. Delicious, healthy, juicy and incredibly tender. It’s all about baking recipe, how to make delicious pumpkin muffins.

Ingredients

  • Pumpkin puree – 425 Gram
  • Vegetable oil – 0.5 cups
  • Eggs – 2 Pieces
  • Sugar – 275 Grams
  • Vanilla extract – 1 Teaspoon
  • Flour – 1.5 Cups
  • Baking powder – 1 teaspoon
  • Soda – 0.5 Teaspoons
  • Cinnamon – 0.5 Teaspoons
  • Ground ginger – 0.5 Teaspoons
  • Ground nutmeg – 0.5 Teaspoons
  • Ground Cloves – 1 Pinch
  • Salt – 0.5 Teaspoons
  • Cream cheese – 200 Gram
  • Chicken yolk – 1 Piece

Directions

  1. Put pumpkin puree in a mixer bowl, add vegetable oil, 200 grams of sugar to it, mix everything at low speed.
  2. Introduce chicken eggs into the bowl, one at a time, stirring after each, add the vanilla.
  3. Mix together flour, baking powder, baking soda, salt and all the spices.
  4. Add dry ingredients in portions to the mixer bowl, stirring after each addition.
  5. Set aside the prepared pumpkin mixture.
  6. Put cream cheese into another bowl of the mixer, add sugar and yolk to it.
  7. Mix everything well.
  8. Grease baking dishes, then fill each with pumpkin dough.
  9. Place the cream cheese filling on top of the pumpkin dough.
  10. Use a toothpick or skewer to stir some pumpkin and cream filling.
  11. Decorate some muffins with nuts. If you don’t like it, don’t add them.
  12. Bake muffins at 180 degrees for about 20-30 minutes, then transfer to a wire rack to cool.
  13. Serve warm or completely cooled muffins.
