Ingredients

  • 1 kg lamb, pork or beef meat
  • 5 carrot (s), roughly chopped
  • 1 piece (s) ginger (the size a thumb), cut
  • 3 clove (s) garlic, finely chopped
  • salt and pepper
  • 1 piece (s) celery, cut
  • 1 leek, sliced
  • 4 sprigs thyme
  • 1 handful wild garlic
  • 1 cup buttermilk
  • 1 bottle honey
  • 1 bottle wine (Hypocras - spiced wine), or
  • Red wine, good, medium dry

Instructions

  1. Chops meat and vegetables into large pieces. Chop the herbs and ginger the size of your thumb and the garlic not so finely.
  2. Take a roasting pan and put it on the fireplace. Add meat, vegetables and herbs and let it sear for a short moment. Seasoned with salt and pepper.
  3. Cover the meat with honey and let it stew. After a few more moments, add a dash of buttermilk, copiously covering the bottom, and let it continue to simmer.
  4. Fill it up with good wine and put it in the oven (about 40 - 60 minutes at 180 ° C).
