Eclair Cake with Fruit and Chocolate

Ingredients

  • Butter (or margarine) – 180 g
  • Water – 250 ml
  • Eggs – 4 pcs.
  • Flour – 150 g
  • Milk – 250 ml
  • Flour – 2 tbsp

  • Sugar – 60 g
  • Dry pudding (semi-finished product) – 1 pack
  • Milk – 400 ml
  • Chocolate – 90 g
  • Milk – 100 ml
  • Sugar – 80 g
  • Starch – 1 tbsp
  • Water – 150-200 ml
  • For decoration:
  • Bananas
  • Kiwi
  • Orange

Directions

  1. First of all, let’s prepare the choux pastry for the cake.
    To do this, put butter or margarine in a saucepan. Fill with water.
  2. We put on the stove until it boils.
  3. When the water and oil boil, pour the flour into a saucepan, and while stirring continuously, dry the dough without removing it from the heat.
  4. Turn off the heat when the dough is moving away from the sides of the pan and dries slightly.
  5. Let the dough cool and stir in one egg at a time. Those. first, mix completely with one egg, only then add the second, etc.
  6. The choux pastry is ready.
  7. Put the dough in a mold, forming the sides with a spoon or spatula. We send it to an oven preheated to 200 ° C for 30-40 minutes.
    Important: the oven cannot be opened until the cake rises and is browned.
  8. While the cake is baking, let’s make the cream. In a bowl, mix all the dry custard ingredients and add the egg to them.
  9. Stir and pour in the milk in portions. Stir the cream thoroughly so that there are no lumps.
  10. We send the bowl to the microwave. Cook at full power until the cream is completely thickened. We open the microwave every minute and stir the cream so that no lumps form, and the cream is boiled evenly. After 4 minutes, take out the finished cream from the microwave and let it cool slightly.
  11. Meanwhile, cook the pudding according to the instructions on the package.
    Important: the amount of dry pudding should be calculated for 500 ml of milk. But we will add a smaller amount of 400 ml to the pudding so that it is thicker than usual.
  12. Mix the custard and pudding until smooth.
    Our cream is ready.
  13. Let’s start making chocolate sauce. In fact, you can skip this step and pour the melted chocolate over the cake. But, if you like to pleasantly surprise your loved ones, then we recommend making this chocolate sauce.
    Put the chocolate in a saucepan, fill it with milk. With continuous stirring, let the chocolate completely melt in the milk.
  14. Add water to the sauce, let the sauce boil.
  15. Fill the starch with a little water. Stir so that there are no lumps.
  16. Pour the starch in a thin stream into the boiling sauce, stir and let the sauce thicken. Remove sauce from heat and let cool.
  17. Meanwhile, our cake was baked. We take it out of the oven, slightly pierce the middle with a fork, without touching the sides. Cool it down.
    If you have a beautiful baking dish, then the cake can be served directly in it. If not, then after cooling completely and filling the cake with cream, you can get it out of the mold.
