Eclairs with Ice Cream and Chocolate Sauce

For the upcoming tea party with my beloved friends, I wanted to cook something like that, but without any special problems. Having looked through the Internet pages, I chose my favorite delicacies – custard cakes, chocolate, ice cream – and we got such delicious, tender, and elegant eclairs, with ice cream and delicious chocolate sauce.

Ingredients

  • Butter – 100 g
  • Water – 1 glass (250 ml)
  • Flour – 1 cup (160 g)
  • Medium eggs – 5 pcs.
  • Salt – 1 pinch
  • Black chocolate – 100 g
  • Cream with a fat content of at least 33% – 1 glass
  • Sugar – 3/4 cup (to taste)
  • Butter – 40 g
  • Vanilla extract – 2 teaspoon
  • or vanilla sugar – to taste
  • Corn syrup (if possible and desired) – 2 tbsp
  • Vanilla ice cream – 300-400 g (to taste)

Directions

  1. Prepare choux pastry. To do this, bring water and oil to a boil over medium heat, add salt.
  2. Add flour little by little, stirring continuously so that no lumps form. Remove from heat and cool slightly.
  3. Beat in eggs one at a time, stirring well until smooth after each egg.
  4. Preheat the oven to 180-190 degrees. Spread the dough on a baking sheet with a teaspoon or with a pastry syringe (in the form of balls or small strips), at a distance of 4-5 cm. (The baking sheet can be lightly greased with butter and sprinkled with flour so that the cakes do not stick, or cover it with oiled paper for baking.)
  5. Bake the eclairs until golden brown, about 30-40 minutes. Do not open the oven during baking.
  6. Meanwhile, prepare the chocolate sauce. To do this, you need to grind the chocolate in a blender or kitchen processor to small crumbs.
  7. In a small saucepan, combine cream, sugar, and corn syrup (if there is no syrup, you do not need to add it – corn syrup is used to avoid sugar crystallization, for a smoother structure of the sauce). While stirring, bring to a boil over low heat.
  8. Pour the hot butter mixture into a blender with chocolate, add vanilla and butter, cut into slices. Pulse until smooth.
  9. Cut the finished custard cakes into halves, fill with ice cream and pour over with chocolate sauce.
