Ingredients

  • 0.5 kg ½ flour (einkorn)
  • 1 cube yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.25 liter ¼ water, lukewarm

Instructions

  1. Set the Thermomix to 5 minutes and heat the grains at 100 degrees on the lowest setting, then grind at maximum speed for 3 minutes, then crumble the cube of yeast and sprinkle in the middle of the mixing bowl, sprinkle the sugar on top and add about two tablespoons of the water . After a waiting time of 20 minutes, knead the Thermomix for 5 minutes, add salt and pour in the rest of the water.
  2. Turn the dough out onto baking paper and shape it into a wake with the help of the paper. Fold the paper over the dough to wrap the dough, place it on the baking sheet and let it rise until the oven has reached 230 degrees. Then bake the piece of dough wrapped in baking paper at the same temperature for 50 minutes. If necessary, finish baking for another 5 to 10 minutes after a knock test.
