Ingredients

  • 1 can tomato (s), chopped
  • 600 ml vegetable stock
  • 500 g potato (s)
  • 1 small onion (s)
  • Herbs
  • salt and pepper
  • Tomato paste
  • Paprika powder, noble sweet
  • sour cream
  • Parmesan

Elke`s Tomato – Potato – Cream Soup

Instructions

  1. Peel, dice and wash the potatoes and place in a suitable saucepan. Peel and dice the onion and add to the potatoes. Add the stock and tomatoes, bring everything to a boil and simmer on a low heat for about 30 minutes, stirring occasionally.
  2. Then puree the soup and season with herbs of your choice and spices.
  3. If the soup is too thin - it`s a matter of taste - it can be thickened with the tomato paste.
  4. As a garnish, I used a dollop of sour cream and a couple of parmesan slices.
  5. I calculated 3 points for my portion.
