Ingredients

  • 400 g fish fillet (s) (e.. panasius, cod, saithe)
  • 1 small zucchini, (approx. 50 g)
  • 1 clove garlic
  • 4 tablespoon breadcrumbs
  • 4 tablespoon olive oil
  • 3 tablespoon herbs, finely chopped (thyme, rosemary, parsley)
  • 1 tablespoon tomato paste
  • some lemon juice
  • salt and pepper

Instructions

  1. Wash the fish fillet, pat dry, divide into 5 - 6 equal pieces and drizzle with a little lemon juice.
  2. Preheat the grill.
  3. Mix the tomato paste with the olive oil, finely dice the zucchini, press the garlic or chop very finely. Mix the tomato paste and oil mixture well with the zucchini cubes, garlic, breadcrumbs, herbs and salt & pepper.
  4. Line the baking sheet with lightly greased aluminum foil or baking paper, place the pieces of fish on it, spread the zucchini crumb mixture on the fish & grill for about 12 minutes.
  5. This goes well with green or mixed salad & baguette or ciabatta.
