Fish Marinated with Tangerines and Green Tea

Ingredients

  • fish fillet – 1 kg
  • green tea – 1 tbsp
  •  garlic – 6 cloves
  •  tangerines – 2-3 pcs.
  •  vegetable / olive oil – 30 ml
  •  salt – 2-3 tbsp
  •  fruit or balsamic vinegar – 2 tbsp
  •  dry rose wine – 100 ml
  •  hot red pepper – 1 pod (or 1 teaspoon ground)
  •  ground black pepper – 1 pinch
  •  carnation – 4 buds
  •  allspice – 8 pcs. (better Jamaican, more delicate aroma)
  •  dried parsley – 1 handful
  •  tarragon – 1 pinch
  •  marjoram – 1 pinch
  •  anise – 1 pinch

Directions

  1. It’s very cool to brew green tea: 50 ml of boiling water for a teaspoon of tea. The tea should not be flavored and should be of good quality. The tea should be infused for about 10 minutes under the lid.
  2. We begin to mix in a small bowl: squeeze the garlic through a garlic press or chop very finely. Finely chop hot red pepper or grind in a mortar (or add ground and mix).
  3. Squeeze tangerine juice or peel and chop finely.
  4. Add salt, spices, tea, vinegar, and wine, mix thoroughly.
  5. Put the cut pieces of fish into a jar (in small pieces, so that later it is convenient to cut into slices), pour everything with marinade, mix, close tightly and remove the marinated fish in the cold for two days. Stir sometimes.
