Ingredients

  • 4 tomato (s)
  • 1 onion (s)
  • 1 bell pepper (s), green
  • 1 cucumber (s)
  • 250 g mushrooms, fresh
  • 100 g olives, black, pitted
  • 150 g sheep cheese, diced

For the dressing:

  • 4 tablespoon olive oil
  • Dose 2 tablespoon balsamic vinegar, approx., To taste
  • 1 teaspoon lemon juice, freshly squeezed
  • 2 cloves garlic, crushed
  • 1 tablespoon basil, finely chopped
  • 1 tablespoon oregano, finely chopped
  • Salt and pepper from the mill

Instructions

  1. First prepare the dressing. To do this, mix the olive oil, balsamic vinegar, lemon juice, garlic, basil and oregano well together in a bowl. Season to taste with salt and pepper.
  2. Wash the tomatoes and cut into bite-sized pieces. Peel the onion and cut into fine rings. Wash, core and cut the pepper into thin strips. Peel the cucumber, core if necessary and cut into slices.
  3. Clean the mushrooms and cut or slice into approx. 2 - 3 mm thin slices. It is best to clean the mushrooms with a brush, as they will soak up water when they are washed off.
  4. Now put all the prepared ingredients in a salad bowl, add the olives, pour the dressing over them and mix everything well. Cover and leave to stand for at least an hour. The longer the salad draws, the better it tastes.
  5. Just before serving, add the sheep`s cheese and mix gently. It goes well with crusty bread or baguette.
