Ingredients
- 250 g lamb`s lettuce
- 250 g rocket
- 8 slices ham, raw (e.g. Serrano ham)
- 1 packet cheese (soft goat cheese or goat camembert), cut into 0.5 cm thick slices
- 10 strawberries, fresh
- 60 g Parmesan or Grana Padano, Pecorino, or similar, shaved
- 3 tablespoon honey or caramel syrup
- 5 tablespoon orange juice
- 4 teaspoons mustard
- some salt and pepper
- 2 teaspoons rapeseed oil or sunflower oil
- 1 dash lemon juice
- 1 pinch (s) herb (s)

- First wash the lamb`s lettuce and rocket and either pat dry or spin. Remove the stalks and arrange in a salad bowl or on plates. Wash the strawberries and remove the stalk. Either cut into slices or serve in one piece on the bed of lettuce. Slice the parmesan and arrange between the strawberries. Cut the soft goat cheese into about 8 equal pieces, about 0.5 cm thick. Wrap each with 1 slice of ham and fry in a pan with 1 teaspoon of unflavored oil (about 2 minutes per side) until the ham is crispy and the cheese is nice and soft. In the meantime, mix a dressing of caramel syrup, orange juice, mustard (I always use 1.5 teaspoons of Dijon mustard and 2.5 teaspoons of French herb garlic mustard) and season with a dash of lemon juice, salt, pepper and herbs. Pour the dressing over the salad and then add the still warm goat cheese packets. I think the amounts should be enough for 2 people, so far I`ve only made the salad for myself.
