Ingredients

  • 2 kg potatoes, waxy
  • 150 g onion (s)
  • 0.5 liter ½ vegetable stock
  • 3 tablespoon vinegar, milder
  • 1 teaspoon mustard
  • salt and pepper
  • sugar
  • 250 g mayonnaise, homemade if possible
  • 5 egg (s), cooked until waxy
  • meat sausage
  • Pickled cucumber

Instructions

  1. Cook the jacket potatoes the day before, peel them when they have cooled, but leave them whole, and cover them with a clean cloth and keep them in a cool place.
  2. The next day, Grandma prepares the salad with various other ingredients according to taste: e.g., with 5 wax-soft boiled eggs, finely diced, or some finely diced pickles (not too acidic, preferably Spreewald style) and / and finely diced meat sausage. So first boil the eggs and let them get cold, then dice the other ingredients.
  3. Cut the jacket potatoes into fairly thin slices and mix with the finely chopped onions.
  4. Bring the broth to the boil together with the vinegar (if you like, add more water), mixed in mustard, salt, pepper and sugar in a small saucepan. Grandma always said: Be careful !! Not too angry !!
  5. Let cool a little and then pour over the potatoes. Let it soak in briefly and then add the eggs, cucumber, etc. Now let it steep and only then fold in the mayonnaise.
  6. Garnish with eggs, tomatoes, pickles and parsley.
  7. The mayonnaise is very important! So it`s best to do it yourself or buy the best one. At least 82% fat! Not suitable for diets!
