Ingredients
- 1 kg jacket potato (s), mainly waxy
- 2 teaspoons mustard, medium hot
- 3 teaspoons sugar
- 100 ml cucumber liquid
- 50 ml white wine vinegar
- 100 ml safflower oil or sunflower oil
- 1 apple, sour
- 4 medium pickled cucumber (s)
- 1 large onion (s)
- 1 clove garlic, to taste
- 0.5 ½ bunch spring onions or chives
- salt and pepper

- Boil the potatoes with 1 tablespoon of salt and 1 tablespoon of caraway seeds. Drain, quench, let cool a little and peel lukewarm.
- In the meantime, put the mustard, sugar, cucumber water, vinegar, oil, a little salt and strong pepper as well as the finely chopped onion (and, if you like, the garlic) in a large, sealable jar and shake vigorously to create a vinaigrette emulsion .
- Peel the apple and cut into small pieces, cut the cucumber into slices, as well as the lukewarm jacket potatoes.
- In a large bowl, alternate jacket potato slices, cucumber and apple with a couple of spoons of the vinaigrette and a little salt and pepper between each layer.
- In the end, there should be a little too much marinade in the salad. The salad should be left to stand for at least 3 - 4 hours, or even better overnight. During this time the marinade is completely absorbed by the salad and the potatoes taste very juicy and do not become mushy. Then mix well.
- Just before serving, cut the chives or spring onions into small rolls and fold them into the salad.
