Ingredients
For the dough:
Flour – 400 g
Butter – 200 g
Eggs – 2 pcs.
Salt – 1/2 teaspoon
For filling:
Green onions – 1 bunch
Bulb onions – 2-3 pcs.
Hard cheese – 200 g
Sour cream – 400 g
Eggs – 6 pcs.
Salt to taste
Ground black pepper – to taste
Directions
Rub the butter on a coarse grater into a bowl of flour. Rub butter and flour into crumbs with our hands. Add salt and mix well.
Add eggs.
Quickly knead the shortcrust pastry, collect in a ball. Put the dough in a cup, cover with plastic foil and let the dough rest in the refrigerator for 30-40 minutes.
Preparing a baking dish (I have a ceramic one, 28 cm in diameter). To make it easier to remove the finished cake from the mold, cut out a circle along the dia of the mold and wide long strips from parchment – lay out the strips in a criss-cross shape, and place a circle of parchment on top.
On a sheet of parchment, roll out the dough into a layer 3 mm thick. Using the cut out round parchment template, cut out a circle from the dough, taking into account the sides.
We transfer the dough together with the parchment into the mold, with the template circle down. We prick the dough with a fork, along the bottom and sides. We put the mold in the oven (we place the ceramic mold in a cold oven) and bake the base for the shortcrust pastry cake for 10-15 minutes at a temperature of 180 degrees.
While the cake base is baking in the oven, prepare the filling.
Rub the cheese on a coarse grater. Chop the green onion. Cut the peeled onions into thin rings, add a little salt and slightly wrinkle with your hands.
Beat eggs with a pinch of salt with a whisk. Add sour cream.
Add both types of onions, cheese and ground pepper there. Mix the filling well.
We take out the base of the pie from the oven.
Put the onion and cheese filling in a sand base. We level.
We send a shortcrust cake with onions and cheese to the oven and bake at a temperature of 200 degrees for about 20-30 minutes (focus on your oven).
We take out the slightly cooled cake from the mold.
Cut the onion pie into portions and serve.
