Remove the longitudinal threads from the celery. Cut lengthways into 3 parts and then cut into cubes. Mix the coconut milk with the curry paste well.
In a pan that fits a lid, heat the coconut oil and allow the onions to turn translucent. Sweat the celery cubes and stir in the coconut milk curry paste. Simmer with the lid closed and reduced heat to the desired cooking point. Stir in the coriander and let it simmer for another 5 minutes with the lid on. Salt as needed.
As a side dish, this is definitely enough for 2 people. For me, who often don`t have side dishes with them, it was a main course.
