Ingredients

  • 300 g monkfish, divided into medallions
  • 8 tablespoon olive oil
  • 2 dashes lemon juice
  • 1 tablespoon parsley, chopped
  • 1 sprig thyme, chopped
  • salt and pepper
  • 1 clove garlic, crushed

Instructions

  1. Combine olive oil, lemon juice, parsley, thyme, salt, pepper, and garlic to make the marinade.
  2. Place monkfish medallions in a shallow dish and pour the marinade over them. Refrigerate for 1 hour.
  3. Heat a charcoal or electric grill to medium-high heat (200 °C / 400 °F).
  4. Remove monkfish from marinade and place on grill. Grill for 10–12 minutes total, turning gently 2–3 times, until the fish is opaque and flakes easily.
