Homemade Gingerbread with Glaze

Easy to prepare and very tasty gingerbread cakes made from cottage cheese dough in protein glaze – baked goods that always work out! These homemade gingerbread cookies are fluffy, soft, fragrant, they can be made in any shape, not only round.

Ingredients

For the test:

  • Cottage cheese – 250 g
  • Sugar – 70 g
  • Egg – 1 pc.
  • Odorless vegetable oil (sunflower) – 50 ml
  • Baking soda – 1 teaspoon.
  • Vanillin – 2 pinches
  • Flour – 350 g + for working with dough

For glaze:

  • Egg white – 1 pc.
  • Powdered sugar – 150 g
  • Lemon juice – 0.5 tablespoon

Instructions

  1. In a bowl, combine cottage cheese, sugar, vanillin, and egg. Grind the combined products with a spoon, pour in sunflower oil, add soda, mix again. Then add the sifted flour. Stir the dough ingredients with a spoon first. Then collect the dough by hand into a ball.
  2. Sprinkle the work surface with flour and roll the curd dough into a layer about 1-1.5 cm thick. Cut out the gingerbread blanks with a round mold.
  3. Place the gingerbread cookies on a baking sheet lined with baking parchment. Gather the remaining dough, roll it out again, cut out the gingerbread cookies and place them on a baking sheet with the previously prepared gingerbread cookies. Put the gingerbread cookies in the oven, preheated to 200 degrees, for 15-20 minutes.
  4. Prepare the icing while baking the gingerbread. In a bowl, combine the whites of one egg, icing sugar, and lemon juice. Beat with a mixer until you get a medium white glossy glaze.
  5. Remove the finished homemade cottage cheesecakes from the oven. Immediately transfer the hot curd gingerbread to a bowl with icing. It is better to do this in small batches so that the gingerbread cookies do not interfere with each other interacting with the icing.
  6. Cover with a second bowl or lid and shake the gingerbread vigorously until frosting. Place the glazed gingerbread cookies on a wire rack and let the glaze dry.

Homemade gingerbread cookies in the glaze are ready. In total, 21-24 pieces will turn out. Serve gingerbread with tea or coffee.
