Ingredients

  • 1 vanilla pod (s)
  • 250 ml milk
  • 2 egg (s), including the yolk
  • 150 g honey (forest honey)
  • 3 sheets gelatin
  • 250 ml sweet cream
  • 150 g berries, mixed, frozen
  • 1 tablespoon powdered sugar

Instructions

  1. First of all: If I make a mousse with gelatine, it is best to prepare it the day before so that it is then set.
  2. Slit open the vanilla stick and scrape out the pulp. Bring the vanilla stick and pulp to the boil together with the milk.
  3. In the meantime, stir the egg yolks with the honey until creamy.
  4. Remove the vanilla stick from the milk and stir the milk into the cream. Briefly whip the mixture in a hot water bath with a whisk until foamy.
  5. Soak the gelatine in cold water for five minutes, squeeze it out and dissolve it in the mixture. Then put in the refrigerator.
  6. As soon as the cream has cooled, whip the cream until stiff and fold in. Put it back in the fridge and let it set.
  7. Thaw the berries for a while before serving and strain them through a sieve. Mix with powdered sugar and place on dessert plate. (The berry sauce doesn`t have to be that sweet because the mousse is quite sweet.)
  8. Cut off the mousse with two tablespoons and spread on the plates.
