Ingredients
- 1 honeydew melon (s)
- 1 vanilla pod (s)
- 1 can coconut milk, unsweetened, (400 ml)
- 5 tablespoon palm sugar or brown sugar

- Peel the melon and cut into bite-sized pieces. Put in the fridge for about an hour.
- In the meantime, halve the vanilla pod and scrape out the pulp with a sharp knife. Put the vanilla pulp, coconut milk and sugar in a saucepan and heat gently while stirring until the sugar has dissolved. Let the mixture cool down briefly and also put it in the refrigerator. Both must be well chilled.
- Before serving, place the chilled melon pieces in a serving bowl and pour the coconut milk over them.
- Tastes delicious, is very light and refreshing and is very easy to make.
