Jerusalem Artichoke Caviar with Green Tomatoes

Jerusalem artichoke caviar with green tomatoes is a very tasty, appetizing, and satisfying snack. Jerusalem artichoke goes well with green tomatoes (which add a slight sourness to the dish) and carrots.
Ingredients
- Jerusalem artichoke – 300 g
- Green tomatoes – 150 g
- Carrots – 100 g (1 pc.)
- Onions – 1/4 pcs.
- Bulgarian pepper – 1 pc.
- Fresh chili pepper – 2-3 g
- Garlic – 1-3 cloves
- Vegetable oil – 3 tablespoon.
- Salt to taste

- How to cook Jerusalem artichoke caviar with green tomatoes:
- Peel the Jerusalem artichoke and cut it into small pieces. Put in a saucepan with hot oil, cook with the lid open for 4-5 minutes.
- Add chopped onion. Fry for another 2-3 minutes.
- Add chopped peppers. We connect all the components, wait 3-5 minutes.
- Cut the green tomatoes into small pieces and add to the vegetables. Add chili pieces. Stir, cover, and simmer for 12-15 minutes.
- We introduce carrots and garlic, chopped on a grater. Cooking for 3-5 minutes.
- Put the prepared caviar from Jerusalem artichoke and green tomatoes in a salad bowl, bowl, etc.
- Vegetable caviar can be served as an independent dish, as well as as a side dish for cutlets, chops or stewed poultry.
