Ingredients
- 800 g potato (s), peeled and diced
- 500 g soup veetables, cleaned and diced
- 1 medium onion (s), chopped
- 2 clove (s) garlic, chopped
- 2 liters vegetable stock
- 1 tablespoon tomato paste
- 1 tablespoon balsamic vinegar
- 2 tomato (s), peeled and diced
- 75 g herkins, sliced
- 1 bay leaf
- 100 ml cream
- 4 sausages, sliced diagonally
- 1 rosemary sprig (s), stripped
- 1 bunch parsley, chopped
- 2 tablespoon rapeseed oil
- 2 tablespoon pumpkin seeds
- thyme
- saffron

- salt and pepper

- Sweat the soup vegetables and garlic in 1 tablespoon of oil. Add the potato cubes and the bay leaf and sweat through. Pour in the broth, add the tomato paste, balsamic vinegar and the spices except the rosemary and cook for about 20 minutes.
- In the meantime, fry the diced onion and rosemary needles in a pan with 1 tablespoon of oil until golden brown. Add the tomatoes and cucumber pieces and cook for a few minutes.
- Now remove the bay leaf from the soup, pour on the cream and puree the soup with the hand blender. Season to taste with salt and pepper and stir in the onion, tomato and cucumber mix. Also add the sausage slices and the chopped parsley.
- Briefly toast the pumpkin seeds in the pan.
- Arrange the soup on plates and serve sprinkled with pumpkin seeds.
