Ingredients
- 300 g carrot (s), cleaned, cut into pieces
- 1 leek, only the white, sliced
- 1 clove (s) garlic, chopped
- 1 tablespoon tomato paste
- 400 ml vegetable stock
- 4 cl sherry
- 100 g crème fraîche
- salt and pepper
- Paprika powder
- Curry powder
- Ginger powder
- Cumin powder
- Coriander powder
- Parsley, chopped

- Sweat the carrots and leek in a little fat. Add the garlic and tomato paste. Top up with the broth and cook for about 15 minutes. Pour in the sherry and stir in the crème fraîche. Season well with the spices and whisk until frothy with the hand blender.
- Serve sprinkled with parsley.
