Ingredients

  • 2 tuber / s beetroot
  • 2 leaves red cabbage
  • 1 onion (s), red
  • 2 cm ginger
  • 1 teaspoon capers
  • 2 cloves garlic in slices
  • 1 tablespoon clarified butter
  • 0.5 liter ½ vegetable stock, instant
  • 1 dash balsamic vinegar, dark
  • 1 tablespoon soy sauce
  • pepper
  • cream

Instructions

  1. Cut the onion, garlic and ginger into fine rings. First remove the stalk from the red cabbage leaves and then cut them into thin strips. Cut the beetroot into cubes.
  2. Heat clarified butter in a deep saucepan. First sweat the onion, garlic and ginger. Then add the capers and the cabbage and steam for 5 minutes. Add the beetroot and pour the stock over it. Bring everything to a boil and simmer for about 30 minutes. Puree the soup and season with soy sauce, pepper and balsamic vinegar. Decorate with a little cream.
