Ingredients

  • 2 lamb salmon
  • 1 teaspoon oil, preferably olive oil
  • 2 cloves garlic, diced
  • Spice mix (dried wild seasoning)
  • 2 sprigs rosemary or rosemary needles, dried
  • pepper
  • salt
  • 1 tablespoon cognac
  • 300 ml red wine
  • 2 cup gravy
  • 2 g cornstarch or locust bean um

Instructions

  1. Take the lamb salmon out of the refrigerator about 1 hour before preparation and let it reach room temperature.
  2. Brush the pan with the oil and quickly fry the meat on both sides with the rosemary and garlic in the pan (about 3 min. / Side), also standing on the sides so that the pieces are a little thicker. Now sprinkle with the spices and remove from the pan, wrap in aluminum foil and let rest for 15 minutes.
  3. Meanwhile prepare the sauce; to do this, deglaze the frying residue in the pan with cognac, pour red wine into the pan and let it reduce. Add the stock and thicken with the starch mixed in a little water until the consistency is desired. Possibly add seasoning. Let the lamb salmon heat up briefly in the sauce.
  4. Green butter beans and rosemary potatoes go well with this.
