Ingredients

For the dough:

  • 125 g flour
  • 1 tablespoon oil
  • 50 ml water
  • a bit salt

For covering:

  • 2 tablespoon crème fraîche with herbs, heaped
  • 2 tablespoon heavy cream
  • 1 leek (thin, or 0.5 thick sticks)
  • 1 slice (s) cooked ham
  • 70 g cheese (Emmentaler), rated
  • salt
  • pepper

Instructions

  1. Knead all the ingredients for the dough together and when it no longer sticks, roll out very thinly (approx. Pizza size).
  2. Mix the creme fraiche and cream together, season with salt and pepper. Spread on the dough, leaving an approx. 1 cm wide edge. Cut the leek into thin rings, the ham into narrow strips and spread them on the dough as well. Finally sprinkle the cheese on top.
  3. Bake in a preheated oven at 250 ° C top / bottom heat until the edge is crispy and the cheese is golden brown. Depending on the oven, this takes about 10 minutes.

  5. If you use normal creme fraiche, you can add a few chopped herbs yourself.
  6. If you like, you can add a small clove of garlic to the creme fraiche mixture.
  7. Raw ham also goes very well with this tarte flambée.
  8. For the vegetarian variant, just leave out the ham. Here, too, a spicy cheese and garlic goes very well.
