Ingredients

  • 300 ml buttermilk
  • 60 g suar
  • 3 packs vanilla sugar
  • 1 lime (s), untreated, juice and grated zest it
  • 2 tablespoon basil
  • 5 sheets gelatine, white
  • 200 ml cream
  • 600 g berries, e.. raspberries, blueberries
  • Basil, for garnish

Instructions

  1. Mix the buttermilk, sugar, a packet of vanilla sugar, lime zest and juice and 1 tablespoon of basil. Soak, dissolve and fold gelatine according to the instructions on the packet. Whip the cream. As soon as the cream begins to gel, carefully fold in and refrigerate for approx. 3-4 hours.
  2. Sort the berries, wash them, mix with the rest of the vanilla sugar and basil.
  3. Shape the mousse into dumplings with the help of 2 tablespoons, arrange on plates with the berries and serve garnished with fresh basil if desired.
