Ingredients

  • 400 g penne
  • 1 tablespoon butter
  • 1 tablespoon oil
  • 2 small onions
  • 1 clove (s) garlic, or more
  • 1 chilli pepper (s)
  • 200 ml vegetable stock (vegetable stock)
  • 150 g mascarpone
  • 250 ml cream
  • 100 g walnuts
  • 2 lime (s), the zest
  • 3 tablespoon lime juice
  • 1 bunch chives
  • sugar
  • salt and pepper

Instructions

  1. Pre-cook the pasta. Finely chop the onions and garlic and sauté in the oil and butter mixture. Pour on the vegetable stock, mascarpone and cream. Reduce the chopped chilli peppers and reduce until the consistency is nice. Grate the zest of two limes and reduce a little.
  2. In the meantime, chop the walnuts finely (not too small, they should still be biting) and roast them in a pan without oil. Add the pasta to the sauce, season with a little sugar, pepper and salt. Also add the juice from the limes and walnuts and mix everything together well. Finally garnish with the fresh chives.
