Ingredients

  • 250 g poultry liver
  • 2 egg (s)
  • 2 teaspoons butter, soft
  • 2 small onions
  • 3 clove (s) garlic
  • Breadcrumbs
  • salt and pepper
  • nutmeg

Instructions

  1. Puree the poultry liver very finely in the mixer and transfer to a bowl. Chop the onions and garlic in a blender and add to the liver. Season well with salt (approx. ½ teaspoon), pepper and grated nutmeg. Now add enough breadcrumbs to make a well malleable dough.
  2. Tip: this is best done with your hands; Put on disposable gloves! otherwise your hands will smell of garlic and liver all day.
  3. Cut off small portions of dough with a teaspoon and shape into dumplings. Bring a broth to the boil, add the liver dumplings and let simmer on a low heat for 10-15 minutes (depending on size).
  4. Serve the soup!
  5. We prefer to eat the dumplings in a good chicken soup.
