Ingredients
- 1 large sweet potato (s)
- 1 zucchini
- 1 eggplant (s)
- 1 half chard
- 0.5 can ½ pineapple, cut into pieces
- 2 cm ginger, more if you like
- 1 large onion (s)
- 1 can pizza tomatoes
- 1 can coconut milk
- Chicken broth or vegetable broth
- curry powder
- Chilli pepper (s), dried

- Chili powder

- Chop the onion and fry with a little oil. Cut the zucchini into slices, the aubergine and the ginger into small pieces. Add everything to the onions and fry briefly.
- Meanwhile, peel and dice the sweet potato. Deglaze the onions, ginger, zucchini and aubergine with the pizza tomatoes and add the sweet potatoes. Bring the whole thing to the boil briefly and add the dried chili peppers.
- Let everything continue to cook on a low flame, add the coconut milk and season to taste with curry powder, chilli, salt and pepper.
- After about 5 minutes add about half the can of pineapple and half the mango and let simmer for about 10 minutes on a low flame. If there is not enough liquid, a little chicken broth or, if it is purely vegetarian, vegetable broth can be added. At the end, the dish can be seasoned with a little lime juice if necessary.
- As a side dish I recommend rice and chapati, an Indian flatbread
