Mango Pudding

This pudding will require mango, condensed milk, water, lime juice, starch, and sugar.
Servings: 6
Ingredients
- Mango (peeled and diced) – 4 cups
- Condensed milk – 3/4 cup
- Sugar – 0.25 cups
- Corn starch – 0.25 cups
- Water – 1/2 cup
- Lime juice – 0.25 cups
- Mango (peeled and diced) for serving (optional)
- Lime (wedges) for serving (optional)
Directions
- Put 4 cups of chopped mango into the bowl of a kitchen processor and chop until puree. Pass the puree through a sieve into a large bowl. Remove the cake.
- In a small saucepan, mix sugar and starch, put on medium heat, add mango puree, condensed milk, water and lime juice to the saucepan. While stirring, bring the mixture to a boil. Cook for about 1 minute.
- Remove the saucepan from the stove, pour its contents into a large bowl, put cling film directly on the pudding. Place in refrigerator for 4 hours.
- Serve the pudding in serving glasses, top with mango cubes and lime wedges (optional). Serve immediately.
