- 1 cauliflower
- 4 egg (s)
- 3 tablespoon flour
- 1 pinch (s) nutmeg
- 80 g butter
- 1 bunch parsley, chopped
- 2 liters lightly salted water

- Clean the cauliflower and cut into florets. Dice the stalk and cook everything together for about a quarter of an hour in salted water (not too salty, as the cooking water is still used!).
- Whisk eggs and flour together and stir into the cauliflower water. Bring to the boil and season with nutmeg. Finally stir in the butter and parsley. Serve hot.
