Ingredients

  • 400 g berries, fresh or frozen
  • 75 g syrup (lemonrass), homemade
  • 5 tablespoon liqueur (limoncello)
  • 5 tablespoon sugar, possibly grape sugar
  • 3 sheets gelatin
  • 200 g whipped cream
  • 1 tablespoon sugar

Instructions

  1. Soak the gelatine according to the instructions on the packet.
  2. Puree the prepared berries with the lemongrass syrup, sugar and limoncello. Brush through a sieve. Weigh out 300 g and stir in the dissolved gelatin. Let it set in the refrigerator for about 30 minutes. Fold in the whipped, sweetened cream and chill for several hours, preferably overnight.
  3. Cut off cams to serve.
  4. Tip: If there is any berry mixture left over after passing through it, you can use it for a fruity sauce.
