  • 1 ½ kg beef, (shoulder)
  • salt
  • fat
  • 4 cloves garlic
  • 500 ml red wine
  • 750 ml meat stock
  • 3 bay leaves
  • 2 tablespoon thyme, dried
  • Pepper, black, ground

Instructions

  1. Peel the onions and cut into quarters. Lightly salt the beef. Preheat the oven (conventional) to 200 ° C.
  2. Heat the fat in the roaster on the stove. Put the roast in it and sear it vigorously on all sides. Fry the onion quarters and sliced garlic. Pour in 1/8 liter of red wine and the stock, add bay leaves and thyme.
  3. Place the roaster on the wire rack in the oven. Cook for 2 to 2.5 hours. In between, gradually pour in the rest of the red wine. Season the meat and sauce with salt and pepper, cut into slices. Spaetzle also taste very good.
