Ingredients

  • 500 g wheat flour, type 550
  • 15 g yeast, fresh
  • 1 teaspoon honey
  • 2 teaspoons salt
  • 1 tablespoon malt coffee, instant
  • 280 ml water, lukewarm
  • 2 tablespoon olive oil
  • 2 handfuls fried onions

Instructions

  1. Mix all ingredients well and knead in the food processor for about 8 minutes. Cover the dough and let it rest for 1 hour, preferably in the oven with the lamp switched on. Then divide the dough into approx. 9 portions, grind round and cover again on the baking sheet and let rise for 15 minutes.
  2. Preheat the oven to 250 degrees.
  3. Brush the rolls with water and dust with flour. Put in the oven and bake for about 15 minutes. Swath 2-3 times. Then let off the steam and switch the oven back to 200 degrees. Bake the rolls for about 10-15 minutes, open the oven door slightly for the last 5 minutes and finish baking (I always put a wooden spoon in between).
