Ingredients

  • 600 g chicken breast fillet (s)
  • 2 onions)
  • 3 tablespoon flour
  • 1 small Tin / s pineapple in rings, unsweetened
  • 1 red pepper (s)
  • 0.5 stick ½ leek
  • 250 g mushrooms, fresh
  • 180 ml curry sauce
  • 250 ml chilli sauce
  • 200 ml cream
  • 400 ml coconut milk, creamy
  • salt
  • pepper
  • possibly garlic
  • possibly Sambal Oelek

Instructions

  1. Cut the chicken into cubes, season with salt and pepper and mix with the flour in a bowl, then fry in olive oil and place in a large ungreased casserole dish. Cut the onions into rings, sauté until translucent and place on the chicken cubes. Cut the peppers into strips, cut half of the leek into rings and spread 2 - 4 finely chopped pineapple rings on the onion meat. Slice the mushrooms on top.
  2. Mix the coconut milk, cream, chilli sauce and curry sauce in a container with a whisk and pour into the baking dish.
  3. Now it is cooked in a preheated oven at 180 ° C for 1 hour covered with aluminum foil and then cooked for another 30 minutes without aluminum foil protection.
  4. If you want, you can press a clove of garlic into the hot curry at the end, it tastes very delicious!
  5. The curry is served with basmati rice and possibly 1 teaspoon sambal oelek.
