Ingredients

  • 1 small papaya, only the kernels it
  • 3 tablespoon olive oil, good
  • 1 tablespoon vinegar, good one
  • a bit salt

Instructions

  1. Mix (olive) oil, vinegar (I recommend a light wine vinegar) and salt with a fork or whisk to make a vinaigrette.
  2. Halve the papaya and remove the seeds with a spoon. Only the kernels are used and added to the vinaigrette. Stir once, done.
  3. Leaf salads go well with this and all other refinements of a salad (spring onions, seeds, sprouts etc.) are of course also possible. The papaya kernels can also be used to refine any other salad dressing.
  4. In terms of taste, papaya kernels are reminiscent of cress, just a bit spicier. The salad dressing always reminds me of my trip to Hawaii, where I enjoyed it every day.
