Instructions

  1. Preheat the oven to 200 ° C top / bottom heat, circulating air 180 ° C.
  2. Peel and halve the papaya and scrape out the seeds with a spoon. Cut the pulp into cubes.
  3. Tip: It looks pretty if you cut balls out of the papaya with a melon cutter, in this case you can save yourself peeling the fruit.
  4. Put the papaya pieces in a baking dish. Scrape out the pulp of the vanilla pod. Mix with lemon juice, rum, coconut milk and sugar and pour over the fruit. Depending on the degree of ripeness of the fruit and personal taste, you can also use more sugar. Bake in the oven for about 20 minutes.
