Ingredients
- 1 small papaya, only the kernels it
- 3 tablespoon olive oil, good
- 1 tablespoon vinegar, good one
- a bit salt

- Mix (olive) oil, vinegar (I recommend a light wine vinegar) and salt with a fork or whisk to make a vinaigrette.
- Halve the papaya and remove the seeds with a spoon. Only the kernels are used and added to the vinaigrette. Stir once, done.
- Leaf salads go well with this and all other refinements of a salad (spring onions, seeds, sprouts etc.) are of course also possible. The papaya kernels can also be used to refine any other salad dressing.
- In terms of taste, papaya kernels are reminiscent of cress, just a bit spicier. The salad dressing always reminds me of my trip to Hawaii, where I enjoyed it every day.
